After baking, remove from oven, place a plate on top of the pan, and then turn the whole thing over to remove the cake from the pan. After removing from pan, begin to poke holes into the top of the cake. You will pour the rum glaze over the top and then allow it to absorb into the hot cake while cooling.

Just before the cake is done, you will mix up the rum glaze for this cake. To do so you will use a medium size saucepan for melting the butter. Add the butter, water, and sugar and boil for approximately 3 to 5 minutes. Add the ¼ cup dark rum to this mixture and then boil for another minute.

Remove from heat and pour onto the top of the cake while the mixture and the cake are still hot. Allow the cake to cool before serving.

1 tsp powdered sugar
1/4 tsp vanilla extract

Preheat oven to 300 degrees. Place tart shells on a cookie sheet and bake about 12 minutes. Remove shells from oven and allow to cool while you make the filling. Increase oven temperature to 350 degrees.

In a large mixing bowl, using an electric mixer, beat together the milk, egg yolks, lime juice and lime zest. Beat until thoroughly blended making sure to keep pieces of zest turned back into the mixture. Pour the filling into the cooled tart shells. Return tarts to the oven and bake at 350 degrees for 15 minutes. Remove tarts from oven and allow to cool.

Just before serving, whip the whipping cream in a large bowl with an electric mixer. Add powdered sugar and vanilla while the beaters are running. Whip until soft peaks form. Add a dollop of the whipped cream to each tart. Sprinkle with some finely grated lime zest, if desired.

Note: You may make the tarts 1 day ahead and refrigerate until serving time, if desired. Be sure to cover with plastic wrap and add the whipped cream right before serving.

ORANGE-GLAZED PUMPKIN BUNDT CAKE

Cake Recipes

1 cup all-purpose flour
1/2 cup whole-wheat flour
2 tsp pumpkin pie spice
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 cup Smart Balance Butter-Flavored Spread
1/2 cup Splenda
1/2 cup light brown sugar
1 cup canned pumpkin
1 large egg or 1/4 cup egg substitute
1/2 cup low-fat buttermilk
2 tsp vanilla extract
1/3 cup powdered sugar
2 tsp orange juice

Preheat oven to 350 degrees. Coat a 6-cup bundt pan with non-stick cooking oil spray and set aside.

Combine flours, spice, baking powder, baking soda and salt in a medium mixing bowl and whisk to mix well. Set aside.

Combine butter-flavored spread, Splenda and brown sugar in a large mixing bowl and beat with electric mixer at medium speed until well blended. Beat in egg and pumpkin. Reduce mixer speed to low, beat flour mixture into pumpkin mixture. Beat in buttermilk and vanilla just until moistened. Spoon the batter into pan and bake 25 to 30 minutes or until a toothpick inserted in center comes out clean. Cool in pan on a wire rack for 10 minutes. Then remove from pan and cool completely on wire rack.

If you wish to use the glaze, combine the powdered sugar and orange juice in a small bowl. Stir until well mixed; add water a drop at a time if needed to reach drizzling consistency. Drizzle over cooled cake.

*To make sugar-free powdered sugar:

Put 3/4 cup of Splenda Granular and 2 tablespoons cornstarch in a blender and blend until it is a very fine powder. 0 grams of sugar and only 4 carbs per tablespoon.

Line a 9x13-inch pan with foil, let the foil extend over the sides of the pan. Butter foil thoroughly.

In a large saucepan, combine the sugar, butter and the milk. Bring to a boil, stirring constantly. Continue to boil for 5 minutes over medium heat, stirring constantly. Remove pan from heat.

Add in the marshmallow crème, white chocolate bar, pecans and vanilla. Stir mixture until smooth. Pour into prepared pan. Let cool to room temperature. Refrigerate until firm.

2 cups granulated sugar

1/2 cup dairy sour cream

1/3 cup light corn syrup

2 tablespoons butter

Directions

Butter an 8-1/2 x 4-1/2-inch loaf pan.

Microwave on high heat for another 6 minutes, or until the mixture reaches 236 degrees on a candy thermometer. Let stand for 15 minutes (do not stir).

7 McIntosh apples, peeled

½ cup orange juice

3 t. artificial sweetener

1 t. cinnamon

1 t. cornstarch

Cut apples into thick slices. Arrange in microwave-save 8 x 12 inch dish. Mix remaining ingredients and pour over the apples. Microwave on high for 11 minutes or until the apples are tender. Also easy to make in the crock pot. Cook on low 6 - 8 hours.
Serve warm or cold. Great on vanilla ice cream.

Cherry Delight (in-laws favorite)

Prep time: 20 minutes, Cook time 15 minutes

NEED TO PREP THE DAY BEFORE, OR MUCH EARLIER IN THE DAY

A. 1 cup margarine, ½ cup brown sugar, 2 cups flour, 1 cup chopped pecans

B. 4 cups Dream Whip, 8 ounce package cream cheese - softened, 1 cup powdered sugar, 1 t. vanilla

C. 1 can Wilderness Cherries

Mix A in 9 x 12 pan. Bake 15 minutes at 400 degrees. Cool.

Mix B in bowl. Pour over cooked baked layer (A). Refrigerate

Next day, pour can Wilderness Cherries over the combined A and B mixture

Chocolate Chip Bit Cake (dad's favorite - we miss you D)

Prep Time: 15 minutes, Cook time: 40 minutes

2 ¼ cup flour

1 bag chocolate chips

1 cup milk

1 ½ cup sugar

½ cup butter flavored Crisco (works WAY better than butter - chips fall to the bottom if you use regular butter, or worse yet margarine)

2 ½ t. baking powder

2 eggs

1 t. vanilla

Blend butter flavored Crisco and sugar then add remaining ingredients except chocolate chips. Pour ½ batter into a 9 x 12 pan, then add ½ chocolate, repeat. Bake at 375 degrees for 40 minutes.

Eggless Wheat Flour Microwaveable Cake

Life has become really hectic for most of us, and as you try juggling between tasks and shuffling your priorities, you are all the more entitled to a break, and what better way to take a break than eat a healthy and absolutely delicious cake!

Well, I know most of you would be watching what you eat, especially on a Monday, after all the binging during the weekend, but what if I told you I have a Wheat cake that you can make in a microwave and it would take you less than 15 mins to do it!! Cake Recipes

Ingredients

2 cups Wheat Flour,

1 and 1/2 cup Powdered Sugar

2 tbsp Milk powder

2 tbsp Cocoa Powder

4-5 medium-sized chocolate chip cookies

1/2-1 tsp Baking Soda

1 and 1/2 cup Milk

1/2 cup White Saltless Butter (you can use regular yellow butter too if you don't mind the salt)

1 tsp Vanilla Essence

1/2 cup grated semi-sweet chocolate

Method

Take a bowl and mix half of the milk, butter and essence properly. Seive the wheat flour, sugar, milk powder,cocoa powder and baking soda. Now add this to the milk and butter mixture and beat properly in one direction. Whisk continuously for 5-7 mins till the mixture starts to fold and form peaks. If it's too thick, add the remaining of the milk slowly while stirring till desired consistency is achieved. Take a microwaveable dish and grease it with oil or non-stick spray. Dust it with some flour and pour the mixture into it. Bake in the microwave oven for about 8 mins, or until done. You can test this by inserting a toothpick in the center of the cake and see that it comes out clean. Remove from the microwave, let it cool for some time. Meanwhile, crush the cookies in a grinder. Then garnish the cake with the crushed chocolate chip cookies and the fresh shredded chocolate.

There, in less than 15 mins, your delicious (eggless) sponge cake is ready. Oh, and let's not forget how healthy it is too!! That's all I could wait before biting into my cake, but if you have more patience, be creative! You can use strawberries and cool whip to kick it up a notch. In any case, it's going to be delicious!

Best of the Best Italian Cream Cake

Ingredients:

1-cup Buttermilk,

Cake Recipes

1-teaspoon Baking Soda,

5-large Eggs, separated,

2-cups Sugar,

1-stick Butter, soft,

½-cup Shortening,

1-teaspoon Vanilla,

1-cup Pecans, chopped,

1-can Coconut, shredded,

2-cups Flour.

Instructions:

Cream shortening, butter, sugar and egg yolks in a large bowl; add flour and buttermilk; mix well; add coconut, pecans, vanilla and beat well. Beat egg whites in a separate bowl until stiff and fold them into cake mixture. Bake at 325° for 30 to 35 minutes in 3 layered pans. Let cool before frosting.

Frosting:

4-tablespoons butter 1-teaspoon vanilla,

8-ounces cream cheese 1-box powdered sugar,

1-cup Walnuts, chopped.

Mix and spread frosting on layers. Place 1/3 cup of chopped walnuts on first layer of icing, add 1/3-cup of chopped walnuts to 2nd layer of icing. Finish spreading frosting on top and sides of cake and finally place 1/3-cup of chopped walnuts on top.

Serves 8 to 10

Note: This cake can be made into a one layer cake by baking it in a 9x13-inch baking dish, but it is not near as good. Another fun and great idea is to add three to six drops of food coloring, depending on how vibrant you want the color to be. I add the food coloring sometimes to the cake and icing and sometimes just to either the cake or the icing. I choose my colors by the holidays, for example I choose red or green for Christmas.

Ingredients:

1 1/4 cups all-purpose flour
1/4 cup unsweetened cocoa
1/2 cup chocolate syrup
2/3 cup milk
3/4 cup sugar
3/4 cup water

1 tsp. vanilla
1/4 cup butter, melted
Whole maraschino cherries, optional

For this black forest pudding cake, you will also need 1 8-inch baking dish.

Directions for this black forest pudding cake:

Step 1
Preheat toaster oven to 350 degrees F.

Step 2
In a bowl, combine sugar, flour, cocoa powder, salt, and baking powder. Stir in milk, vanilla, and melted butter. Add 1/2 cup cherries.

Step 3
Meanwhile, combine chocolate syrup, hot water, and cherry juice.

Step 4
Spread the batter into a greased baking dish and pour the chocolate and cherry juice mixture evenly on top of the butter.

Step 5
Put into oven and bake for 35 to 40 minutes or until the edges began to pull away from the pan or the center has set. Remove from oven and let stand for about 15 minutes. Top with maraschino cherries.

Mocha Almond Pudding Cake Recipe:

Follow the instructions above, omitting the cherries and the cherry juice. Instead, stir 1/2 cup chopped almonds into the batter. Spread the batter into an non-greased pan.

Combine 4 teaspoons instant espresso coffee and hot water. Stir in 1/2 cup chocolate syrup and pour mixture over the batter. Bake according to the instructions above.

Orange Marmalade Cake With Mixed Berries (A Sugar-Free Recipe)

Citrus and summer fruit are an ideal combination. Mixed berries - strawberries, raspberries, blackberries, and blueberries - are delicious all on their own. When berries are paired with this Orange Marmalade cake you have a celebration of summer.

Put butter-flavored Crisco, Splenda, eggs, and cream cheese in small mixer bowl. Cream ingredients at medium speed until fluffy. Add orange extract. In a small bowl combine flour, baking soda, and salt. Turn the mixer to low and slowly add dry ingredients to creamed mixture. Fold currants into batter.

Coat a 9-inch round layer cake pan with baking spray. Pour batter into the pan and spread it out evenly. Bake at 350 degrees for about 35 minutes, or until the cake pulls away from the side of the pan. Makes 8 servings.

Spread whipped topping on top of cake before serving. Refrigerate leftover cake.

Nothing is more American to America than apple pie, or in my eyes apple crumble cake. Biting into a piece is like biting into a piece of home. It tastes like a warm part of American heritage (if that is even possible). Disneyland.....nothing clings to my romantic image of how the turn of the century should have looked like, than this place. My crumble cake brought me back to the feeling of walking down the land of Main Street U.S.A.

It is the most overlooked land in all of Disneyland, but without it all the charm and glamour of the park would be partly gone. Far as the eye can see you see shops that not only serve necessity but delightful simplicity. That is only the outside of course, because what you get is beautiful merchandise. From the delight of the old-fashioned Gibson Girl Ice Cream Parlor to the ringing and brightly lit Penny Arcade, you know you are part of an innocence now found.

"Main Street U.S.A. Apple Crumble Cake"*

Ingredients: 1 and ¾ cup sifted self-rising flour, 7 tbs butter softened, 1 gala apple cored, thinly sliced and tossed in lemon juice, ½ tsp and a pinch of cinnamon, 5 tbs sugar sifted, 5 tbs Splenda, 7 tbs butter softened, 1 egg beaten, 2 granny smith apples peeled and cored, and 1/3 cup raisins.

1) Preheat the oven to 350 degrees. Grease a 7 inch springform pan, line with wax paper and grease the paper.

2) Sift ¾ cup flour and ½ tsp ground cinnamon. Then rub 3 tbs butter into the flour until it resembles breadcrumbs, stir in 2 tbs sugar and 2 tbs Splenda

3) Put 4 tbs butter, 3 tbs sugar, 3 tbs Splenda, egg, and 1 cup flour in a bowl. Beat for 1 minute. Spoon into the pan.

4) Mix together the granny smith apples and raisins. Spread them evenly. Sprinkle with the topping.

5) Bake for an hour. Cool in pan for 10 minutes. Peel off the wax paper. Put the gala apple in the center and sprinkle with sugar and cinnamon.

6) Enjoy with the rich simplicity of old time America.

6 - 7 tart apples

1/2 cup sugar

Directions

Preheat oven to 450 degrees.

First of all, don't peel the apples. Core and cut apples into 1/2-inch thick slices. Place apple slices into the pie crust.

  • Put dough in a shallow greased pan and spread out evenly.
  • Brush melted butter over the top.
  • Pare and core the apples, and slice into eighths.

  • Cover with a clean kitchen towel and set in a warm place.
  • Let the dough rise again.
  • Bake at 350 degrees for 30 minutes.

1 teaspoon cream of tartar
3 tablespoons shortening

Using a large mixing bowl and an electric mixer on medium speed, you will add the dark rum, white cake mix, eggs, water, oil and coconut cream jello instant pudding and then beat to combine. Beat mixture for about 4 minutes and then pour evenly into the two prepared 9 inch cake pans. Place in the preheated oven to bake for about 25 to 30 minutes or until the cake is done. Do not under bake the cake, bake until the middle of the cake springs back after lightly pressing it.

After baking the cake, remove it from the oven and allow it to cool for about 15 minutes and then turn the cakes out onto a rack to cool.

Mix the flaked coconut, crushed pineapple and juice, vanilla instant pudding and the remaining 1/3 cup dark rum. Fold in the thawed whipped topping until well blended.

Use this mixture for the cake filling and then use the remaining mixture to frost the entire cake. Sprinkle with coconut if you like for an old fashion yet beautiful presentation. Place in the refrigerator overnight to chill or for at least 3 to 4 hours before cutting and serving.

This cake is easy to make using a boxed mix and the frosting uses instant pudding mix and frozen whipped topping. Even beginning bakers can produce a beautiful and tasty cake with this recipe.

LUSCIOUS LEMON POKE CAKE & FLUFFY LEMON PUDDING FROSTING

Cake Recipes

1 box of your favorite white cake mix, baked in 2 9-inch layers
2 cups boiling water
1 large pkg lemon flavored gelatin or 2 small pkgs

Allow cake layers to cool on wire racks. Wash pans and return cooled cakes to the clean pans. Pierce cake with a large 2-tine fork at about 1/2-inch intervals.

Stir the boiling water into the gelatin in a mixing bowl with a pour spout. Stir at least 2 minutes or until the gelatin is thoroughly dissolved. Carefully pour half the mixture over one cake layer. Pour remaining gelatin over the second cake layer. Refrigerate for 3 hours. Remove from refrigerator and dip one pan into warm water for about 10 seconds to loosen. Unmold onto the serving plate. Spread with about 1 cup of the frosting (recipe below). Unmold the second cake layer same way as the first and place atop the frosted layer. Frost the top and sides of the cake with the remaining frosting.

Refrigerate cake for at least an hour before serving. Store any leftover cake in the refrigerator.

FLUFFY LEMON PUDDING FROSTING:

1 cup cold milk
1 pkg (4-serving size) Lemon flavored instant pudding mix
1/4 cup powdered sugar
8-oz frozen whipped topping, thawed

Pour milk into a large bowl and add the pudding mix and powdered sugar. Beat with a wire whisk for 2 minutes. Fold in the whipped topping. Use as frosting for the above Lemon Poke Cake.

½ cup shortening
2 eggs
1 cup buttermilk
1 teaspoon orange extract
1 teaspoon lemon extract
2 cups flour
1 teaspoon cinnamon
½ teaspoon salt
1 teaspoon red food coloring
1 teaspoon soda
1 teaspoon vinegar

Combine sugar, shortening, eggs, buttermilk, flavorings, flour, cinnamon, salt, and food coloring in mixer bowl; beat for 2 minutes. Add soda and vinegar; mix well. Spoon into 9 x 13-inch cake pan. Bake at 350 degrees for 35-45 minutes or until cake tests done.

Peach Fuzzy Navel Cake

1 - 16 oz. can peaches
½ cup peach schnapps
1 cup sugar
¼ cup orange juice
1 - 2 layer package yellow cake mix
1 - 4 oz. package vanilla instant pudding mix
4 eggs
2/3 cup oil
½ cup powdered sugar

Combine drained peaches, schnapps, sugar, and orange juice in covered container. Chill for 24 hours. Drain, reserving ¾ cup liquid. Puree peaches in food processor. Combine peach puree with cake mix, pudding mix, eggs, oil, and ½ cup reserved liquid in mixer bowl; mix well. Spoon into greased and floured bundt pan. Bake at 350 degrees for 40 minutes. Invert onto wire rack to cool. Blend powdered sugar and remaining ¼ cup reserved liquid. Drizzle over cake.
