Some of the tastiest Mexican recipes for desserts are those, which do not take very long to put together. You might want to make an elaborate Mexican cinnamon chocolate cake, and that type of recipe is worth the effort of course, but other times you might just fancy something quick and easy.
Mexicans like fresh produce and this includes fruit as well as vegetables. You can serve fruit with sugar over the top or with dulce de leche, which is a Mexican caramel sauce. Try sprinkling both sugar and chili powder over your sliced fruit, for a real Mexican flavor.
Cake Recipes
If you are in a rush and you fancy something Mexican for dessert, what about adapting an existing dessert to give it a Mexican flavor? You can melt some Mexican chocolate and drizzle it over cake, sandwich cookies together with dulce de leche or serve your favorite ice cream in a flour tortilla.
Flour tortillas are perhaps the most versatile Mexican ingredient to work with, because you can use them for both savory and sweet Mexican recipes. Fill tortillas with ice cream, whipped cream, and ice cream syrup for a two minute dessert. Add chopped nuts, marshmallows or whatever else you like.
Banana Chimichangas
To make a delicious hot dessert, you could melt a quarter cup of butter in a skillet, then stir in three sliced bananas and half a cup of brown sugar. When the sugar is dissolved, add a couple of tablespoons of spiced rum or a few drops of vanilla extract and cook the mixture for a minute or two. Divide this mixture between two tortillas and roll them up.
To make banana chimichangas, you could fry these tortilla roll-ups in oil until golden brown. Alternatively, just serve them as they are with some whipped cream or vanilla ice cream. Substitute peach, plum, or any other soft fruit for the banana if you like. Mango would be another good idea, or papaya.
If you do not want to make chimichangas, you can serve the banana sauce hot over vanilla ice cream. Perhaps you fancy serving some tortilla chips with them, in which case you can cut flour tortillas into triangles, spray them with cooking oil, sprinkle sugar and cinnamon over them and bake them for five minutes at 400 degrees F.
Hot Cinnamon Roll Ups
Another great flour tortilla recipe is to butter one side of a tortilla, then sprinkle a tablespoon of sugar and a teaspoon of cinnamon over the butter. Roll the tortilla up and butter the other side. Sprinkle a little more sugar and cinnamon over it and then bake it for a few minutes at 375 degrees F.
This crispy, golden brown treat takes about a minute to prepare and can be served ice cream, whipped cream or a can of fruit pie filling for an ultra-fast dessert. Obviously this one will take longer to make if you have to preheat the oven, so it is best to do that in advance or use an oven, which is already hot from cooking another recipe.
