Self rising flour is easy to make from scratch, just combine one cup of all purpose flour with 1/4 teaspoon of baking soda, 1/4 teaspoon of salt and 1 teaspoon of baking powder.

Butter Milk

Out of butter milk? You can simply create your own. You can substitute 1 cup of butter milk with 1 cup whole milk and a tablespoon of vinegar. You can also substitute 1 cup of butter milk with 2/3 cup of plain yogurt and 1/3 cup whole milk.

Garlic

Ran out of garlic? Substitute garlic powder instead. About 1 clove of garlic equals 1/8 of a teaspoon of garlic powder.

Honey

You can easily replace honey with sugar and water. 1 cup of honey equals about 1 and 1/4 cup of sugar and a 1/4 cup of water.

Substituting Sugar

If you are short on sugar on hand or would like to replace it due to health issues, here are some hints to substitute sugar:

Sugar can be exchanged with with maple syrup, corn syrup, brown sugar, honey, stevia, and molasses. Although, some recipes will call for sugar or a granular sweetener and not syrup due to baking and texture requirements.

If you striving to decrease the amount of sugar you eat due to health issues, consider the many sweeteners, sometimes called sugar replacements at the supermarket. They include, Sweet and Low, Splenda, Equal, and plant based Stevia.

Mom's Apple Dumplings are a delicious after dinner dessert or they are great for visiting with friends or co-workers over a cup of coffee. The Apple-Cheddar Cheese Dessert is so easy even a beginner can make it in no time. Both are also perfect for taking to "pitch-ins".

MOM'S APPLE DUMPLINGS

DOUGH:
2 cups self-rising flour
1/2 cup shortening
3/4 cup milk
FILLING:
5 cups chopped apples
1 cup sugar
1 tsp cinnamon
SYRUP:
2/3 cup butter
1 1/2 cup sugar
1 1/2 cup boiling water

Make dough by cutting shortening into the flour until crumbly. Add milk and blend to make a dough. Roll out dough on a lightly floured surface with a lightly floured rolling pin. Roll into a rectangle.

To make filling, In a mixing bowl, put apple, sugar, and cinnamon. Stir to mix well. Spread dough down the center of the dough. Roll up sides to make a roll. Cut into medium thick slices and place in a lightly greased baking pan.

To make syrup, bring water to a boil in saucepan. Add butter and sugar and return to a boil. Pour syrup over dumplings. Bake approximately 1 hour at 375 degrees.

APPLE-CHEDDAR CHEESE DESSERT

6 pared, sliced apples
1 tbsp lemon juice
1 cup sugar, divided
1/2 cup flour
dash salt
1/2 tsp cinnamon
1/4 cup margarine
2/3 cup shredded Cheddar cheese

Place apples in greased baking dish; sprinkle with lemon juice and 1/2 cup of the sugar. Combine flour, salt, cinnamon and remaining sugar. Add margarine and mix until crumbly. Stir in cheese and spread over apples. Bake approximately 45 minutes at 350 degrees until lightly brown on top.

Ingredients

(This is to make a large birthday cake, you can scale down for an ordinary cake)

200 grams of stork or other baking margarine

200 grams of caster sugar

4 medium / large eggs

3 tbs of cocoa powder

Approx 75 grams of cornflour

100 grams of self raising flour

1 tbs baking powder

Vanilla essence

For the Icing

75 grams of margarine

Icing sugar to make a stiff mix

Water

Vanilla essence

Step 1

Using a mixer or food processor, cream together the sugar and margarine until it is light and fluffy. Add 1 tsp of vanilla essence and mix thoroughly.

Step 2

Add the 4 eggs, 1 at a time, mixing thoroughly until each egg is fully blended in. Leave mixer on for around 5 minutes.

Step 3

Into a weighing scale, put 3 heaped tablespoons of cocoa powder. Add cornflour to make up to 100 grams, then add 100grams of self raising flour. Finally add 1 tablespoon of baking powder.

Step 4

Sieve the flour mix into your mix. Fold in, then mix with mixer until fully incorporated.

Step 5

Split mix between 2 lightly greased non stick 8 inch baking tins. Bake in over at 175 degrees centigrade for around 20 minutes. Test by lightly shaking the tin to see if it wobbles like a jelly. (if it does give it 5 more minutes.) If its firm, slide in a skewer to check the mix is cooked. It should not have any cake mix on, but will have steam from the mix. As long as there is no mix on the skewer, remove from oven to cool.

Step 6

While the cake is cooling, mix the margarine for the icing with 1 tsp of vanilla essence and enough icing sugar to make a stiff mix. Add 1 tsp of water at a time and mix in, the mix will let down and become creamy and smooth. Set aside until the cake is cold. DO NOT attempt to ice the cake when warm, the icing will go runny.

Tip - when icing, do not spread the icing, as this cake is so light it will break under the pressure. Just add spoonfuls of icing around the bottom layer, then put the top on and rotate slightly to spread the filling.

Step 7

Decorate the top of the cake with sieved icing sugar or cocoa powder. Get a cup of coffee, then eat a huge slice!

To make a celebration cake you can ice the outside of the cake and decorate it with chocolate curls, or ice and fill with whipped cream, or make a chocolate fudge icing mix, or use cream and cherries for a black forest gateaux. What ever floats your boat really.

Variations

You can also make this recipe into a victoria sponge, just take out the cocoa and substitute with more cornflour. Then ice with vanilla icing and jam. Or, use lemon essence and lemon icing for a tangy variation.

1 tsp vanilla extract
1/4 cup water
1 1/4 cup boiling water

Preheat oven to 350 degrees. In a large mixing bowl combine flour, Equal, baking powder, salt, cinnamon and the 3/4 cup cocoa powder.

In a 1-quart saucepan melt butter over medium heat. Remove from heat and stir in banana, egg, vanilla, and 1/4 cup water, stirring until blended. Stir in flour mixture just until blended. This mixture will be thick. Spoon into an ungreased glass 8" x 8" baking pan, spreading evenly.

In same bowl, with a wire whisk, beat brown sugar, 1/4 cup cocoa and boiling water until blended. Pour over chocolate batter. DO NOT STIR!

Bake 35 minutes; should have some fudgy sauce on the top. Serve warm.

Makes 8 servings.
*Splenda Baking Blend may be substituted.

YUMMY BANANA CAKE

2 1/2 cups cake flour
1 tsp baking soda
1/2 tsp baking powder
3/4 cup butter
1 1/2 cups Equal Sugar-Lite*
2 eggs
1/4 cup buttermilk
1 1/4 cups finely mashed ripe bananas
1 tsp vanilla extract

Preheat oven to 375 degrees. In a large mixing bowl, stir baking soda and baking powder into flour. Set aside. Cream butter and Equal together until smooth. Add to the flour mixture. Mix in eggs, buttermilk, bananas and vanilla. Mix together until well blended. Pour into a 9x13-inch baking pan that has been sprayed with a non-stick vegetable oil spray. Bake 30-35 minutes or until golden brown and a toothpick inserted in the center comes out clean.

Topping: Place 2 tablespoons of cornstarch and 3/4 cup Splenda Granular in blender. Blend until a very fine powder. Using like you would powdered sugar, sprinkle over top of cake Store any leftover in an airtight jar.

*May substitute Splenda Baking Blend.

Cooking Instructions:
The first step in making a plain cake batter is to beat butter so that it becomes smooth. It is best to use softened butter as it requires less time and effort to make it smooth. While beating, gradually increase the speed of beater in this process. Keep beating butter with sugar until it gets a creamy texture. Now gradually add egg yolks and beat well to mix evenly. In a separate bowl, beat egg whites on high speed for 2-3 minutes to form a foamy texture . Always beat egg whites just before adding in the batter otherwise it separates itself into liquid and foam and your cake might become hard. Mix egg whites into the mixture and make fine smooth batter. Add few drops of vanilla essence as it will remove any unpleasant smell of egg. Mix separately, all the dry ingredients i.e flour, baking powder, salt and sift them together so that all the air escapes from the mixture and they mix evenly. Using spatula, add and mix dry mixture to the batter. You can also use a beater for this purpose but you will have to keep its speed very low because we just want the ingredients to be mixed together. Now add half cup of milk, raisins and mix using any flat spatula. In a suitable size baking pan, pour the batter and bake in preheated oven for 30-40 minutes at 180 degree centigrade. It is not necessary that the baking time remains same as mentioned above. It may be more or less because depending upon the working of your oven. The best way to check the cake is when you start sensing its smell. At this point, insert a knife from top till deep down the bottom of your cake. If it comes out clear and dry then your raisin came is ready.

Low-gluten flour, cocoa powder, vegetable oil, those are the main ingredients of today's chocolate cake. Decorated with thick chocolate cream made from the same coco powder, this cake leaves an endless aftertaste at the tip of your tongue.

Chocolate cream cake (vegetarian) - how to make cake from scratch recipe

(For your reference, the amounts of ingredients provided hereafter are for three helpings)

CAKE INGREDIENTS:

60 g low-gluten flour,
12 g cocoa powder,
45 g fine sugar,
30 g vegetable oil,
70 g water,
1/4 tsp (1.25ML) vanilla extract,
1/2 tsp (2.5ML) baking powder,
1/8 tsp (0.625ML) baking soda

VEGETARIAN CHOCOLATE CREAM INGREDIENTS:

150 g chocolate syrup,
10 g low-gluten flour,
10 g corn starch

DECORATION: chopped nuts

BAKING: in the middle of the oven, 185° C for 10 minutes

PROCESS:

  1. Sift flour, cocoa powder, baking powder and baking soda mixture into one big bowl, then add some sugar and mix it even.
  2. Add some vegetable oil
  3. Mix with a rubber spatula.
  4. Add a little bit water, but don't stop the mixing.
  5. When the paste is more or less ready, add vanilla extract and again, mix (if you have no vanilla extract, just skip this step).
  6. Pour the well-mixed paste into an 8-inch square baking pan paved with greaseproof paper or tin foil, spread the paste evenly in the pan.
  7. Pre-heat the oven to 180 ° C and then put in the pan and bake for 10 minutes or so, take out the cake for cooling.
  8. Prepare the vegetarian chocolate cream. Pour chocolate syrup into the milk pan, add some sifted low-gluten flour and corn starch and mix evenly.
  9. Heat the milk pan. While heating, keep stirring the mixture (use a wooden spoon or heat-resistant silicone spatula. Stir frequently so that the syrup won't be overly-burnt at the bottom.
  10. When the syrup is boiling, turn off the heat and soak the milk pot in cold water. Keep stirring while the chocolate syrup is cooling. Fully cooled syrup will become very thick and creamy. Voila, the chocolate cream is done.
  11. When the cake is fully cooled, cut it into 4 pieces.
  12. Take one piece of cake slice and coat with a layer of chocolate cream. Put a second cake slice on the top and coat with chocolate cream. Put on a third cake slice and chocolate cream coating, and finally put on the last piece of cake slice. Put the finished cake into the refrigerator for more than two hours so the taste of the cake will become denser.
  13. Take out the refrigerated cake and cut off the irregular edges, then cut into three helpings. Top the cake with chocolate cream, and sprinkle some chopped nuts as decoration.

Ingredients: 4 oz (110g)self raising flour, sifted, 1 tsp baking powder, 4 oz (110g)soft margarine, 4oz (110g)sugar, 2 large eggs, 1 tbs. cocoa powder. Filling ingredients:

2 oz (55g) butter or quality margarine, 4 oz (110g) icing/confectioners' sugar, 1 rounded tbs cocoa powder, 2 tsp of milk.

Preheat the oven to 170 deg C, 325 deg F.

Sift the baking powder and flour into a large mixing bowl. Add the other ingredients to the bowl and beat until everything is mixed together. Put half the mixture in each of the prepared pans and place on the centre shelf of the preheated oven for about thirty minutes.

4.)'Fruity' Cake: A delicious and fruity treat for the whole family

Ingredients: 2 eggs, 1 c. salad oil, 2 c. sugar, 1 tsp. salt, 2 c. flour, 1 tsp. baking soda

2 tsp. cinnamon, ground, 1 tsp. vanilla, 1/2 c. chopped nuts (optional), 1 can pie filling (apple, cherry, peach, etc.)

When mixed, stir in can of fruit with its syrup. Pour into a greased and floured 9 x 13 inch baking pan. Bake at 350 degrees for 35-45 minutes. Cool.

  • Brush melted butter over the top.
  • Pare and core the apples, and slice into eighths.
  • Lay them thickly on top of the dough in straight rows.
  • Dust sugar and cinnamon over the top of the apples.
  • Cover with a clean kitchen towel and set in a warm place.
  • Let the dough rise again.
  • Bake at 350 degrees for 30 minutes.

To serve, cut into squares and serve hot with whipped cream, if desired.

Homemade Apple Cake

Ingredients

2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon cream of tartar
3 tablespoons shortening
1 egg, well beaten
7/8 cup milk
4 tart apples
3 tablespoons sugar
1/4 teaspoon cinnamon

Directions

  • Mix and sift the dry ingredients in the order given.
  • With the tips of your fingers, mix in the shortening.
  • Add beaten egg to the milk and add slowly to the mixture, stirring constantly.
  • Beat until dough is smooth.
  • Spread dough evenly in a cake pan.
  • Core and pare apples and cut into slices.
  • Lay apples on top of dough.
  • Sprinkle with sugar and cinnamon.
  • Bake at 400 degrees for 25 to 30 minutes, or until knife inserted in center comes out clean.
  • Serve hot.

Celiac disease is an autoimmune disease, often genetically inherited, in which the sufferers are intolerant of gluten. Celiac disease is caused by an abnormal reaction to gliadin, which is a gluten protein found in wheat, barley, and rye. The only cure is abstinence from gluten, which means that a whole new method of eating has to be learned.

It can be said that if celiac sufferers avoid flour, they will be fine. Although this is simplistic, it is not far wrong. But celiac sufferers have birthdays and celebrations the same as anyone else. And that means they may want a cake now and then, even while avoiding flour.

It is possible to bake without flour and there is a whole range of products on the market for gluten-free alternatives. However, for various reasons, the products may not be viable alternatives: they may not be available locally; or they may be priced beyond your budget. For many people, adapting regular recipes has to be the answer. For those who wish to adapt mainstream recipes, I have provided a few recipes below.

Baking Without Gluten - Cake Recipes for Celiac Sufferers

Rice Pudding Cake

Despite its name, it is a firm and heavy moist cake, and it is full of flavor. It is firm enough to cut into large slices. I did not develop this recipe it was given to me over twenty years ago by a friend in Western Australia. Her daughter was gluten intolerant. It is still one of the nicest gluten-free cakes I have ever tasted.

Ingredients:

3 cups cooked rice

4 eggs, beaten

1/2 cup demerara sugar

2 medium bananas, mashed

2 apples, finely chopped or grated

1 pear grated

500g (1 pound) cottage cheese

2 cups mixed dried fruit

1/2 cup dried apricots, chopped

1/2 cup almonds or brazil nuts, roughly chopped grated rind of one large orange

1 teaspoon nutmeg

1 teaspoon cinnamon

1 teaspoon all spice

Heat oven until 2200 C, 4000 F

Method:

Combine everything and mix well, and place in a greased bundt tin or a fluted ring tin to give the hole in the center. Bake for about half an hour until firm and cooked through. When a skewer comes out clean, the cake is cooked. Cool in the tin, refrigerate for a few hours, and then serve with cream.

Flourless Black Forest Gateaux

Serve warm with ice cream or whipped cream, or simply dusted with icing sugar. To keep this recipe totally flour free dust the tin with cacao.

Ingredients:

Cake:

4 (1 ounce) squares semisweet chocolate, chopped

1/2 cup butter

3/4 cup white sugar

1/2 cup cocoa powder

3 eggs, beaten

1 teaspoon pure vanilla extract

Filling:

a jar of Morello or Sweet cherries in natural juice.

1 Tub of thick whipping cream.

Preheat oven to 3000degrees F or 1500 degrees C.

Method:

Grease an oblong Swiss roll tin, or a jelly pan and dust with cocoa powder. Melt the chocolate in a bowl over boiling water, but do not let the bowl touch the water. When the chocolate is melted, add the butter. Remove from heat, and stir in sugar, cocoa powder, eggs, and vanilla. Pour into the prepared pan. Bake in preheated oven for 30 minutes. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

Place powdered sugar or cocoa powder on a piece of kitchen paper and place the cake on it. Drain the jar of morello cherries and whip the cream until it holds its shape; then add the cherries. Place on top of the cake and roll up like a roll. Top with grated chocolate and serve with cream.

Healthy Fruit Cake

This recipe makes an excellent cutting cake. To make a 11/2 lb cake in an 8" tin:

Ingredients:

1 large banana, as green as possible

1 large carrot, peeled and grated

2 eggs 100 ml olive oil

4 oz (100g)granulated sugar

1 table spoon of black treacle/ molasses

8 oz (200g)gluten free flour mix

1/2 teaspoon of bicarbonate of soda

1/4 teaspoon of cream of tartar

1 level teaspoon of mixed spice

1 level teaspoon of ground ginger

1 level teaspoon of cinnamon

8 oz (200g) mixed dried fruit

several glace cherries green and red

Preheated oven, 350°F or 180°C

Method:

Beat the banana and carrot to a smooth puree with the olive oil, sugar and egg in a food processor. Add the flour and beat in. Add the treacle, spices, and raising agents and beat in. Add the fruit and beat in. Pour the mixture immediately into a deep 8" cake or 2 lb loaf tin lined with a layer of non-stick baking paper. Bake for 11/4 to 11/2 hours.

Chocolate Almond Gateau

Ingredients:

Cake:

110g/4oz best-quality dark chocolate (70 percent cocoa solids)

2 tablespoons white rum 110g/4oz whole almonds

110g/4oz butter, preferably unsalted

110g/4oz caster sugar, plus 1 tbsp extra, to mix with the egg whites

3 eggs, preferably free-range, separated

For the chocolate icing:

110g (4oz) best-quality dark chocolate (70 percent cocoa solids)

2 Tablespoons white rum

110g/4oz unsalted butter

To decorate:

crystallized violets

flaked almonds

You will also need 2 x 18cm/7in sandwich tins.

Method:

Preheat the oven to 180C/350F/Gas 4. Line the base of each of the tins with greaseproof paper. Brush the bottom and sides with melted butter and dust with a little rice flour. Melt the chocolate with the rum in a heatproof bowl over a pan of simmering water or in a low oven. Bring a small saucepan of water to the boil and add the almonds. Bring back to the boil for 2-3 minutes and then test an almond to see if the skin is loose. Drain the almonds, peel and discard the skins. Grind the whole almonds in a food processor until they are slightly gritty.

Cream the butter and add the sugar. Beat until pale, light and soft. Beat in the egg yolks, one by one. Whisk the egg whites until stiff. Add the extra tablespoon of sugar and continue to whisk until stiff peaks form, then add the melted chocolate to the butter and sugar mixture. Divide the prepared almonds into four portions. Add one portion to the creamed mixture. Fold in a quarter of the egg white, followed by more almonds. Fold in the remaining eggs and almonds alternately until they have all been added. Divide the mixture between the two prepared tins and make a hollow in the center of each cake. Bake in the oven for 20-25 minutes. The sides should be cooked but the center still a little unset. Leave to cool for a few minutes in the tins; them remove them from the tin. Allow the cake to cool completely before frosting.

To make the icing, melt the chocolate with the rum in a heatproof bowl over a pan of simmering water or in a low oven. Whisk in the butter, a tablespoon at a time, until melted. Remove from the heat and whisk occasionally until cool. If the icing seems too runny, put the bowl in the fridge and allow to firm up. Whisk to lighten and then use. When the cake is completely cold, fill and ice with the chocolate mixture. (If you want to cover the sides and pipe a border around the top, make 11/2 times the quantity of icing.) Decorate with flaked almonds and crystallized violets.

Tia Maria and Chocolate Cheesecake

Rice does not contain gluten and the Asian food stores have rice cakes which are gluten free.

Ingredients:

Base:

125g (4oz) rice cakes

50 g (1 1/2oz) butter, melted

Filling:

2 teaspoons powdered gelatin

11/2 tablespoons hot water

125ml (4oz) cream, whipped 375g

(12oz) cream cheese

1 tablespoon castor sugar (powdered sugar)

200g condensed milk

1 tablespoon of orange zest

100 ml Tia Maria or a liquor of your choice

Topping:

60g (2oz) dark chocolate, melted

Method:

Mix the crushed rice cookies and melted butter and press on to the base and sides of your chosen container.

Dissolve the gelatin in hot water, and let stand. Blend the cream cheese and the sugar, add the condensed milk, and the liquor. Whip the cream until it holds its shape and fold into the cheese mixture, fold in the gelatin. Melt the chocolate either in the microwave on half power or in a bowl over hot water. Make certain the bottom of the bowl is not in contact with the water as it will be grainy. Add the orange zest and then add to the cheese mixture. You can swirl it in to give a marbled effect of combine it to look paler like coffee. Pour the mixture into the crust and chill for a few hours. Serve with cream.

Orange Almond Cake with Orange Sauce

A moist and light orange flavored cake that can be served alone with a light yogurt for afternoon tea, or add the orange sauce for a decadent dessert!

Ingredients:

Cake:

3 eggs, separated

2/3 cup white sugar

1/4 cup rice flour

1 teaspoon ground cinnamon

1/2 cup orange juice

1 tablespoon of orange zest

1 1/2 cups finely ground almonds

Orange Sauce:

2 tablespoons heavy cream

2 cups white sugar

1 cup freshly squeezed orange juice

2 tablespoon grated orange zest

1/2 cup butter

4 egg whites

Preheat the oven to 325 degrees F (165 degrees C). Grease a 10 inch springform pan with cooking spray, and dust with rice flour.

Method:

In a large bowl, whip egg yolks with 2/3 cup of the sugar until thick and pale. This will take about 5 minutes with an electric beater, and it is ready when the beater is taken out of the batter and it leaves a trail. Stir in the rice flour the orange juice, the orange zest, and then fold in the almond meal and cinnamon.

In a separate glass or metal bowl, with absolutely no trace of fat, whip 3 egg whites until they hold a stiff peak: they will not incorporate any air at all if there is fat or egg yolk in the bowl. Fold into the almond mixture until well blended. Pour into the prepared pan, and spread evenly.

Bake for 35 to 40 minutes in the preheated oven until a toothpick inserted into the center comes out clean. Cool in the pan on a wire rack.

To make the orange sauce, cream together the butter and 2 cups of white sugar in a medium bowl. Stir in the cream, and place the dish over a pan of barely simmering water. Stir in orange juice and zest. Whip 4 egg whites in a separate bowl until soft peaks form. Fold into the orange sauce. Spoon over the cake and serve immediately.

Anytime cake is called for, check out these old fashion cake recipes for some delicious treats. Whether you need a coffee cake or a fancy cake, I have a recipe for you! Red Velvet Cake is always good for many different occasions. If you prefer a coffee cake type dessert, try this recipe for Butterscotch Rounds.

MY FIRST RED VELVET CAKE WITH CREAM CHEESE ICING
2 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
1 teasp. soda
1 teasp. cocoa
2 eggs
1 1/2 cups Wesson oil
1 teasp. vanilla
1 bottle red food coloring (1-ounce)
1 cup buttermilk

\"Cake Recipes\"

Mix the first 4 ingredients with the Wesson oil. Add remainder of ingredients and mix well. Bake in oven at 350 degrees for 15 to 20 minutes when baked in three layers. Vary baking time if using 2 layers or a 9 x 13 pan. Double the icing recipe if any extremely rich cake is desired!

Yummy Old Fashion Cake Recipes

ICING
8 oz. cream cheese
1 stick oleo
1 box powdered sugar
1 cup chopped nuts (I use pecans)
1 teasp. vanilla

Soften cream cheese and oleo. Mix all ingredients together and spread on the cooled cake.

BUTTERSCOTCH ROUNDS
1/4 cup butter
1/2 packed cup brown sugar
1/2 cup pecan halves
1 pkg active dry yeast
1/4 cup hottest tap water
2 1/3 cups all-purpose flour
1/3 cup granulated sugar
1 teaspoon salt
1/4 teaspoon soda
1 cup dairy sour cream
1 egg

Melt 2 tablespoons butter in each of two 8-inch round cake pans. Sprinkle half the brown sugar then half the pecans over the butter in each pan. Set aside while you prepare the dough.
In a large mixer bowl dissolve the yeast in the hot water. Add 1 1/3 cups of the flour, the sugar, salt, soda, sour cream, and egg. Blend on low mixer speed for about half a minute while scraping down the sides of the bowl constantly. Turn speed to high and beat for two minutes while scraping down the sides of the bowl occasionally. Stir in the remaining flour. Using a tablespoon, drop the batter over the pecan mixture in each of the pans. Let rise in a warm spot for 50 minutes. Note, this dough will not double!

Preheat oven to 350 degrees. Bake the rounds 25 to 30 minutes or until golden brown. Immediately remove from oven and invert pans onto serving plates. Leave the pans in place for about a minute to allow the butterscotch to drizzle over the coffee cakes. Serve warm.

Yield: 2 round coffee cakes.
