Method

Mix all the dry ingredients first and then add butter, eggs and sugar substitute to blend it well. Now stir the mixture in grated apples and nuts. The cake will be well baked in a 9 x 13 pan at 375 degrees. Baking time is about 40 to 50 minutes.

Stork Cake

Ingredients:

3 boxes cake mix, any flavor

2 4 x 6 inch bread pans (rectangular)

1 6 inch round cake pan

1 9 inch round cake pan

1 large piece of cardboard, covered in colored plastic wrap

Embellishments; licorice, round candies

Directions:

Prepare cake mixes according to the directions on the box and pour into each cake pan. Allow cakes to cool completely, you may even wish to freeze them as frozen cake is much easier to work with and will be thawed by the time you are done icing and adding the finishing touches.

Slice one of the bread pan cakes in half to create the legs for the stork, and cut the other bread pan cake in half diagonally. Place the largest round cake in the center of the plastic wrapped cardboard, then use one of the diagonal pieces to create the neck, placing the widest end flush against the round cake.

Remove the extra corner that doesn't meet the round one, and place the 6 inch cake here against the cut edge to connect to the head. The widest part of the other diagonal piece should be placed flush against the head to form the stork's beak. Place the legs on the bottom of the body, and ice in white or pale yellow.

The beak and legs can be iced using black, brown, or orange, or bright yellow icing. Use candies for the eyes, licorice for the wing and for a line through the beak. For an extra touch, add a plastic baby from the craft store and wrap in a white cloth, placing the corners of the cloth at the edge of the stork's beak. The cloth can be secured to the cardboard beneath the cake with discreetly placed push pins.

Easy Butterfly Cake

Ingredients:

3 boxes of cake mix, any flavor

Icing

Food coloring

Heart-shaped cake pan

Muffin tin

Aluminum foil

Cardboard

Candy

Directions:

Prepare the cake mixes according to the directions, using the heart-shaped pan to create the butterfly's wings. If you only have one heart-shaped pan, you'll need to bake the wings separately, allowing time between each to cool. If possible, bake one of the wings the night before to cut down on cooling time.

Cut the cakes from the muffin tin in half and ice with black or dark brown icing for the body of the butterfly. The heart shapes should be placed on either side of the body and colorfully iced. Candy and licorice can be used for eyes and antennae.

Banana

2 small bananas
1 box of yellow cake mix
1 box of instant banana cream pudding mix
4 eggs
1 c. water
1/4 c. oil
1/2 c. chopped nuts, optional

Slice bananas into a large mixing bowl. Beat until they are well mashed, then add in the remaining ingredients. Mix with a mixer at medium speed until all ingredients are blended together. Pour into a well greased and floured 10" tube pan. Bake at 350 degrees for 60-70 minutes, let cool in the pan for 20 minutes before removing. Sprinkle with confectioners sugar when cake is completely cooled.

Lemon

1 box yellow cake mix
1 box instant lemon pudding mix
4 eggs
1/4 c. salad oil
1 c. water
1/4 c. confectioner's sugar

Combine and blend all of the above ingredients (except for the confectioner's sugar). Beat at medium speed for 2 minutes. Pour into greased and floured baking pan. Bake at 350 degrees for 45 minutes or until done. Cool for 15 minutes in the pan and then turn it out onto a wire rack. Sprinkle with confectioner's sugar. Let cool and enjoy.

Strawberry Jello

1 box yellow cake mix
1 box strawberry flavored gelatin mix
1 pkg. dream whip

Follow directions on box and bake cake in a rectangular baking pan. Make gelatin according to directions on the package. Once it is done baking, poke holes all over it using a large pronged fork, then pour gelatin all over cake focusing on the holes. Put dream whip on top as icing. Refrigerate for 2 hours before serving.

Lemon-Lime Jello

1 box yellow cake mix
1 box lemon flavored gelatin mix
1 box lime flavored gelatin mix
1/3 c. reconstituted lemon juice
1 c. confectioner's sugar

Add gelatin granules to the dry cake mix. Proceed to mix cake, following the directions on the box. Pour batter into a 9 x 13 inch floured and greased baking pan. Bake according to package directions. Mix lemon juice and confectioner's sugar together. When it's done baking, prick the surface with a fork. Pour lemon and sugar glaze over the top of the cake. Let cool before serving.

The very first of my homemade wedding cakes was a carrot cake recipe and it was from scratch. Homemade wedding cakes are the best. The only time I EVER used a mix was in a high volume situation. It was exclusively the white wedding cake recipe that was slightly time consuming, and the chefs insisted upon my using their mix. If you have ever worked in a professional kitchen then you know how those head chefs can be at times, it is more about saving money and time, but for me it is so much more about quality. I did manage to sneak in all of my homemade fillings though.

  • Try to stick with a simple homemade recipe such as one that does not require a lot of fancy steps. A dump cake recipe is a good choice.
  • I know it does not sound so delicious but dump recipes basically have one requirement and that is that all ingredients get dumped into the bowl at once and mixed. And that is it. What could be easier than that? One of my best and most frequently requested cake is chocolate buttermilk dump recipe.
  • Have all of your ingredients measured out and at room temperature before you start the process of putting it all together.
  • Making a wedding cake if taken in steps is just a matter of multiplying your favorite homemade recipe and baking them off in larger pans.
  • Fill the cake pans 1/2 to 1/3 full. You can fill a pan a little more if using a lighter batter a little less when using a heavier batter. This is the part that you will need to judge as you gain experience.
  • Always grease, flour and put parchment or wax paper along the bottom of the pans.
  • Always let the cakes cool completely before covering and storing. You will need cardboard circles to put under each cake for support when lifting and moving the cakes.
  • You need to decide how many layers your cakes will be before baking, you can bake each layer separate or cut your cakes in half to make two layers. (It depends on how deep your pans are and how much you fill them as to how many layers you get out of each cake.) For wedding cakes I prefer using a two layer cake with one layer of filling because it keeps the cake a little more stable. But you will need to figure out your preferences.

Add lemon zest and beaten egg one after the other. Add flour and fruit in small quantities. Add brandy and mix. Transfer the batter into the pan and bake for 4 & 1/2 hours at gas mark 3. Take it out and cool. It can be iced after a few days.

2 1/4 cups flour
1 tsp baking powder

1 cup water
1/2 to 2/3 cup sauerkraut, chopped, rinsed, drained

Preheat oven to 350 degrees.

Cream together shortening and sugar. Add eggs; mix well. Add vanilla, salt and cocoa. Sift together flour, baking soda, and baking powder. Alternating, add flour mixture and water. Fold in sauerkraut. Bake in a greased and floured 9x13-inch pan at 350 degrees for 35 to 45 minutes. Frost with your favorite frosting.

MARTHA'S CHOCOLATE CAKE

1/4 lb butter
1/2 cup shortening
1 cup water
4 tbsp cocoa
2 cups sugar
2 cups flour
2 eggs, beaten
1/2 cup milk
1 tsp vanilla
1/2 cup pecans

Preheat oven to 325 degrees.

Mix butter, shortening, water, and cocoa in pan and bring to a boil. In bowl, mix sugar and flour. Pour liquid mixture over dry ingredients and then add eggs, milk, vanilla, and pecans. Cook in a greased and floured loaf pan 20 to 30 minutes at 325 degrees.

ICING
1 1/4 lb butter
4 tbsp cocoa
4 tbsp milk
1 tsp vanilla
1 box powdered sugar

Five minutes before cake is done start the icing. Melt butter, cocoa, milk in pan. Add vanilla and powdered sugar. Mix in 1/2 cup pecans. Ice cake while it is hot.

This dirt cake is simply adorable and delicious, despite its quite extraordinary name. You will need these ingredients in making this great sweet dessert.
A few pieces of gummy worms
16 oz. of cream-filled chocolate cookies, crushed
8 oz. of cream cheese, softened
Softened butter, 1/2 cup
1 cup, confectioner's sugar
1 teaspoon, vanilla extract
8 oz. chocolate pudding
3 cups, whole milk
12 oz. whipped cream, thawed

Procedure:
Cream the sugar, cream cheese, butter and vanilla. Mix these ingredients well until they have become smooth and fluffy in texture. Then, use a separate bowl to combine the pudding mix and the milk. Blend in the cream cheese mixture and the whipped cream.

Afterwards, put 1/3 of the crushed cookies and half of the pudding mixture to the bottom of the pan. Keep doing the same pattern until you have used up all the crumbs of cookie and the pudding mixture. Refrigerate the mixture for 8 to 12 hours. A few minutes before serving, decorate the top portion of the cake with some flower-shaped candies and gummy worms.

If you wish, you could use a plastic flowerpot to put the mixture. This will make the presentation quite adorable, which makes the mixture appear like soil with some gummy worms on top.
Recipe for No-Bake Luscious Raspberry Cheesecake

This no-bake cake recipe features a fabulous combination of raspberry and cream cheese. Have the following ingredients ready:
Cream cheese, 8 oz.
Frozen or fresh raspberries, 3 cups
Cheesecake pudding mix, 1 box
Frozen whipped cream (thawed), 12 oz.
Melted butter, 1/2 cup
Crumbs of graham crackers, 3 cups

Procedure:
Blend the cracker crumbs and the melted butter. Use a fork to combine well and press at the bottom of a pan. Then, bake the mixture for at least 10 minutes. Cool the crust and set aside.

Meanwhile, use a food processor to prepare the filling. Combine the pudding mix, raspberries and the cream cheese. Process well until the mixture turns smooth and creamy. Add in the whipped cream and mix some more.

Spread the filling into the crust. Put the cheesecake into the freezer for a maximum of 2 hours. Prior serving the cake, thaw for one hour and top with whipped cream and slices of raspberries.

Here is a simple banana cake recipe using a cake mix that is easy and delicious. It can be baked either in a 9×13-inch pan or in a bundt pan (my preference).

The savvy realist within me admits that cake mix recipes often turn out better than from scratch cakes. Have I mentioned that I am a huge fan of Anne Byrn, The Cake Mix Doctor? Everything I've ever made from her cookbooks has turned out great, but I've been reluctant to admit it, until I learned that Jamie Lee Curtis recently declared The Cake Mix Doctor her favorite cookbook on the Rachel Ray Show!

This recipe is from The Cake Mix Doctor Returns. I made a few changes to the original recipe. I omitted the additional 1/4 cup of sugar, replaced the 1/2 cup sour cream with plain yogurt, and skipped the 3/4 cup finely chopped pecans to keep it friendly for those who have nut allergies. I also added 2 tablespoons of flour which is a trick my mother learned from her Home Ec teacher decades ago to help cake mix cakes be less crumbly.

Simple Banana Cake Recipe

Serves 16 to 20 or 12 to 16 as a bundt cake

Vegetable oil spray for coating the pan

Flour for dusting the pan

1 cup mashed bananas (from 2 or 3 very ripe bananas)

1 package (18.25 ounces) plain yellow cake mix

2 tablespoons flour

1/4 cup sugar (optional)

3/4 cup vegetable oil

1/2 cup sour cream or plain yogurt

4 large eggs

2 teaspoons pure vanilla

1 cup (6 ounces) miniature chocolate chips

3/4 cup finely chopped pecans (optional)

2 teaspoon confectioners' sugar, for dusting on top

Position an a rack in the center of the oven and preheat oven to 350 degrees F. Lightly mist a 13×9 inch metal cake pan (or bunt pan) with vegetable oil spray. Dust with flour, shake out the excess flour and set the pan aside.

In a large mixing bowl, place the mashed bananas, cake mix,flour, sugar (if using), oil, sour cream, eggs and vanilla. Beat with an electric mixer on low speed until the ingredients are incorporated, about 30 seconds. Stop the mixer and scrape down the sides of the bowl with a rubber spatula. Beat on medium speed until the mixture lightens and is smooth, about 1 1/2 minutes longer. Scrape down the sides of the bowl again, if necessary. Stir in the chocolate chips.( If you are intending to bake the cake in a bundt pan, stir in the pecans too, if you are using them.)

Pour the batter into the prepared cake pan. Smooth out the top with a rubber spatula. If you are baking the cake in a 9×13-inch pan, scatter the pecans (if using) evenly over the top and place the pan in the oven.

Bake the cake until is deeply golden brown on top and the top springs back when lightly pressed with your finger, 43 to 48 minutes (50 to 55 minutes for a bundt cake). Remove the cake from the oven and immediately sift the confectioners sugar over the top so that it melts to form a glaze. Let the cake cook for 20 minutes, then slice and serve while still a little warm. (If you are using a bundt pan, allow it to cool for about 10 minutes, then turn it out of the pan and sprinkle with the sugar.)

Storage: Store this cake, covered, at room temperature for up to three days or for up to one week in the refrigerator.

Icing a cake is probably one of the most challenging yet fun part of baking a cake. It is challenging because it takes skill to produce a smooth finish and this improves with practice; fun because there are so many ways of icing a cake and make it look beautiful.

What types of icing are there?

The most common form of icing is buttercream which is also the type that you get out of the ready-made mixes. It is made of butter, confectionery sugar and milk, although some have eggs and salt depending on what you prefer.

Preparing your cake for icing

1. Once the cake is baked, allow it to cool completely over a wire rack before you start icing. If you apply icing on a cake that is not completely cooled, your icing will not turn out well. If you do not have time to do the frosting on the same day, you may refrigerate the cake for a day or two. If you need more time you can also freeze the cake. Make sure you wrap it in cling wrap and then in aluminium foil. In this case, you will need to defrost the cake completely before you start icing. If it is not completely thawed at room temperature, you will notice that your icing will 'sweat'.

2. Make sure the cake is flat. If it is not flat, slice the bottom layer so that it sits flat on the table. Never use the sliced surface for icing.

3. A swivel cake stand would be useful as it enables you to handle your spatula at your best angles.

4. Place strips of wax paper around the borders of your cake so that your icing does not smear the cake board.

Applying the Icing onto your cake

1. You will need to have two layers of icing, the first layer being the 'base' to seal the crumbs. This is just a thin layer of icing. Let it set completely before applying the next layer. You may refrigerate the cake for a day so that it completely seals the crumbs.

2. Make a considerable amount of icing to produce a smooth and even finish. The last thing you want is insufficient icing and you need to make another batch. Worse still, you make do with what you have and produce an uneven finish.

3. If you want to add colour to your icing, use paste colour instead of liquid colour. The latter may change the consistency of your icing.

4. Starting from the middle of the cake, use a large metal spatula to spread the icing towards the edges. Be careful not to scrape up the crumbs.

5. For the sides of the cake you may choose to use a small angled metal spatula. With the spatula vertical, carefully work your way around the cake. Some people prefer to start from the top of the cake, whilst others from the side. It is entirely up to you and how you think it works best for you.

6. The tip is to dip your metal spatula in hot water to produce a smooth finish. Over time with practice, what may take up to an hour may become a 5-minute job to you.

Every family needs a great banana cake recipe, a delicious homemade cake that can be rustled up in no time at all, filling the house with that lovely banana aroma as it bakes.

This banana cake recipe is very simple, and is a great way to make use of those odd bananas that tend to languish in the fruit bowl. Once the skins go brown and spotty, they're just perfect for a recipe like this. Ripe bananas have much more flavor, and their soft texture means they blend into the cake mixture easily.

If you have a lot of ripe bananas you could make two banana cakes and freeze one. Another alternative is to freeze some of your ripe bananas. 225g (8 oz, 2 cups) self-raising (self-rising) flour

3 bananas, peeled

175g (6 oz, 1 cup) dried fruit (use sultanas, raisins, currants, chopped glace cherries, candied peel or a mixture)

Makes a 2lb (900g) cake

Method

  • Pre-heat the oven to gas 4/180C/350F. Oil and base line a 2lb (900g) loaf pan.
  • Put all the ingredients except the dried fruit into a food processor and blend until well mixed.
  • Take the food processor bowl from the base machine, remove the processing blade and stir the dried fruit into the mixture.
  • Spoon the cake mix into the pan and bake for around 1 hr 20 minutes, or until a fine knife blade inserted into the cake comes out clean. Check the cake after 1 hr 10 minutes and if necessary cover with a piece of foil to prevent the top from burning.
  • Leave until cool, then turn out of the tin.
  • This banana cake keeps well in an airtight tin for 2-3 days, or refrigerate it for up to 7 days.

For a banana nut cake, substitute chopped walnuts for some or all of the dried fruit, and scatter some over the top of the cake before baking.

3.    55 toothpicks
4.    One large decorative bowl
5.    One large star tip

Step 1: Place Styrofoam ball into the bowl. The bowl should only cover 1/3 of the Styrofoam ball.

Step 2: Place a toothpick in the Styrofoam ball near the bottom above the rim of the bowl.

Step 3: Place a mini cupcake on the toothpick in the middle. Half of the mini cupcake should be above the rim of the decorative bowl and the other half below the rim of the decorative bowl.

Step 4: Using another toothpick, place the next cupcake to the left of the cupcake, from step 3, so they are touching.

Step 5: Continue adding cupcakes to the left around the entire rim of the decorative bowl.

Step 6: Start the next row by placing a toothpick in the Styrofoam above the first row then add a mini cupcake so they are touching. Continue adding mini cupcakes row by row to the left, until the entire Styrofoam ball is covered.

Step 7: Make sure all the cupcakes are touching, there should not any space between the rows. You may adjust the cupcakes if necessary.

Step 8: Using the large star tip start in the middle and swirl your way out to the edge of the cupcake creating a rose pattern.

Tip: When using butter or butter cream icing beware of displaying your cupcake bouquet in a warm climate.  The warm temperature will cause the icing to slide off the cupcakes. As a substitute, solid vegetable shortening can be used however; you will sacrifice the rich buttery flavor.

Every year about 20 of us go on an annual camping trip. However, this year I am bringing along a surprise for the group. I have recently purchased a new Dutch oven for cooking an easy and different meal. A person can get tired of eating only hamburgers and hot dogs for a week. My oven comes with a complete, Dutch oven cookbook. As I was going through the cookbook, I found some truly fantastic recipes that I want to try. My favorite is the dump cake recipe. When I first read the name "dump" cake, I was not sure what I was expecting. I certainly was not expecting what the recipe produced.

The recipe was originally created to be cooked by kids. Therefore, making it lives up to its name. The dump cake recipe is quick and easy and can be made with two main ingredients in four easy steps.

Dump cake ingredients:

A can of your favorite fruit

A box of white cake mix

Butter (optional)

Non stick spray (optional)

Four easy steps:

Step 1 - open a can of fruit and empty it into the bottom of your Dutch oven. Do not forget to pack the can opener. You may also want to spray the oven with a non-stick spray. This will help keep the cake from sticking to the bottom of the pan.

Step 2 - poor the box of white cake mix evenly over the fruit. If you desire, you can place slices of butter of top of the cake mix.

Step 3 - place your Dutch oven over the open coals and place some coals on top of the oven.

Step 4 - bake until the cake is golden brown and crust is formed around the edges.

Using a Dutch oven to cook your meals over an open fire takes some skill. You need to understand how and when adding and removing coals will affect the dish that you are cooking. You will want to practice using the oven to make sure you get the feel of how it handles temperature changes. Especially, when making the dump cake recipe. Burning the bottom will ruin the taste.
