And a birthday cake is always a must - although now days 'cupcakes' are also the rage. Although bakeries may offer fancy varieties - they often come at with a hefty price tag. So if your budget is limited, don't hesitate to order a large cake from your supermarket or warehouse bakery. And if you have something special or unique in mind when it comes to how you would like the cake decorated - don't hesitate to ask them if they can accommodate you. I've seen supermarket bakeries do great "beer" and "cocktail" related decorations on their cakes. Remember to give them at least several days notice for your order.

As for the beverage - of course there must be a toast to the guest of honor at some point in the evening. Wine, beer, mixed drinks or champagne are all appropriate to toast with (as, of course, is any non-alcoholic beverage for those guests that prefer not to drink). Prior to the date of the party, decide who will be toasting the birthday boy or girl and asked them to prepare ahead of time a short toast. When he or she finishes with their toast - have them ask all guests to raise their drinks to the guest of honor.

For the rest of the night - make sure there is plenty of water and soda on hand. Lemonade or ice tea also go over well. As for alcoholic beverages - see what your budget allows. The "21" age group will probably be happy with just beer, however some of the older guests may prefer wine.

Ambiance: Although decorations aren't necessary - they do help set the stage for a festive get together. They can be as simple as a few balloons bouquets strategically placed throughout the room. Also - a balloon bouquet on each side of the entrance to the party shouts 'Party' and also makes it clear to guests that they have arrived at the right location. A few vases of fresh flowers are also a nice touch. Party supply stores have great "theme" decorating items (sports, beach, etc.) that can also add flair to the event.

Music also plays an important role. Should it just play in the background or does it have a major role in the event such as in the case of dance music? Think through the music choices ahead of time, as well as the sound system if the party is not being held in your home. Ahead of time assign one person responsibility for the music throughout the duration of the party. And remember - there's a whole slew of 'drinking' related songs out there (type in "songs about drinking" in a search bar and they'll be at your finger tips).

Do you want to play drinking games? If you only know of the same or two that everyone else knows just go to your favorite search page and type in "drinking games" and you'll have access to more games you ever thought were possible.

Always keep in mind the guest of honor when planning the party: Take into consideration the likes and dislikes of the celebrant throughout all of your planning. If he or she has a hobby, a favorite food, a favorite city - all these things might spark ideas of how to incorporate it into the party theme. For example let's say that the birthday boy is a sports fanatic. You can send out 'sport ticket' invitations to the party and decorate in his favorite team's color. Or the birthday girl has a favorite singer - you would want to make sure that songs from that artist are included in the party's music mix. Or perhaps she's a chocoholic. When I was searching for the best cupcake recipe for my daughter's birthday party I thought I'd find a handful of different versions of some textbook cupcake that I could dolly up and make pretty. I was going out of my way to even look for a recipe, it would have been far easier to grab a premix at the grocery store. However given the enormous importance of a little girl's birthday party the search went on for the best cupcake recipe. Never would I have imagined the 100's of different recipes, frosting, decorations and the craziness surrounding this baby cake phenomenon.

Which rock had I been hiding under? All of a sudden we'd gone from enjoying the humble slice of carrot cake with cream cheese icing to these amazing designer cupcakes with unimaginable flavors, designs, swirls and sprinkles and names like 'Red Velvet'.

So after a little more research of this delectable gem I stumbled across what I guess you could call a branded or trademark cupcake from Magnolia Bakery located in New York. This was my first attempt at making cupcakes and I'm delighted that the Magnolia Bakery vanilla cupcake is the one I set my benchmark with.

Magnolia Bakery Vanilla Cupcake Recipe (makes 24)

1 C Unsalted Butter, Softened (225gm)

2 C Sugar

4 Large Eggs (room temperature)

1 ½ C Self Rising Flour

1 ¼ C All-Purpose Flour

1 C Milk

1 tsp Vanilla Extract

• Preheat oven to 350 degrees Fahrenheit (180 Celsius).

• Line two 12-cup muffin tins with cupcake papers.

• In a large bowl, on medium of an electric mixer, cream the butter until smooth.

• Add the sugar gradually and beat until fluffy, about 3 minutes.

• Add the eggs one at a time, beating well after each addition.

• Combine the flours & add in 4 parts, alternating with the milk & vanilla extract, beating well after each addition.

• Spoon the batter into the cups about 3/4's full.

• Bake until the tops spring back when lightly touched, about 20 to 22 minutes.

• Remove cupcakes from pans and cool COMPLETELY on a wire rack before icing with butter cream frosting.

Personal Tips to ensure success with this recipe

- Use unsalted and room temperature softened butter.

- Avoid putting all ingredients in a bowl and mixing, butter must be creamed first, then follow instructions on adding different ingredients.

- Use natural vanilla extract instead of vanilla essence, it costs slightly more but it makes the difference between a beautiful cupcake or an artificial flavored tasting cupcake.

My vanilla cupcakes turned out light and fluffy, golden and tasting perfect especially accompanied with a huge swirl of butter cream frosting. The best cupcake recipe from Magnolia Bakery was delicious, it had the perfect texture, appearance and taste. How to Make Plain Sponge Cake the Traditional Way

When it comes to sponge cake making, there are a lot of methods which we can use; some are good, some not so good. But nowadays many bakeries and cake shops are using the familiar premix, which is very handy indeed and just a little faster, but not so much.

In my opinion I still think that when quality is our main concern, the traditional method is still the best. So please find below one very good traditional way to make plain sponge cake.

\"cake Recipe\"

Here are the ingredients needed for around 2 to 3 pieces (6" to 8" diameter):

Egg whole: 510g (around 10 pieces)

Castor sugar: 305g

Plain cake flour: 215g

Corn flour: 65g

Unsalted butter: 15g

As usual we turn the oven on first, with the temperature dial set to 180ºC (356ºF).

After that, we can sieve the flour and corn flour together.

Then we melt the butter and keep it aside near the oven, so it does not set.

Now is the time to place the eggs and castor sugar together in a bowl which can be attached later on to the electric mixer.

Then we start whisking them with a hand whisk on a hot water bath.

We keep whisking all the way through to stop burning occurring on the bottom of the bowl.

When the egg mix starts to become a little hot, say around 45ºC to 50ºC (113ºF to 122ºF) we take the bowl off the heat, and we attach it to the mixer and turn the mixer on at top speed.

When the egg mix starts to become very light and fluffy, it could take 7 to 10 minutes, we turn down the mixer to the 2nd gear, and keep it mixing to let the sponge cake mix cool down nicely.

This is when we have plenty of time to prepare the sponge cake rings or tins. If we are using bottom less rings, we wrap a piece of grease proof paper on the bottom without greasing the rings. If we are using full bottomed cake tins, we just place a round piece of grease proof paper on the bottom of each of them, without greasing them as well.

The reason we do not use grease is because this way the sponge cake mix will stick to the side of the container, keeping a very nice shape, otherwise it will shrink toward the middle. This is just a little trick.

By now the egg mixture should have cooled down enough, so we take the bowl off the mixer and fold in the dry flour mixture slowly mixing with a long spatula. We keep mixing slowly until smooth and last we add the melted butter and combine well.

Then, we fill all sponge cake tins or rings up to 2/3 of their height, and insert them into the hot oven straight away.

If the oven has a ventilation duct, we keep it shut during the 1st half of the baking and then we keep it open for the 2nd half.

The normal baking time should be 30 minutes; this is the standard baking time for plain sponge cakes.

If the sponge cake is not properly baked after 30 minutes, it is because the oven is not hot enough, exception made for super sized rings, of course.

If you are not sure about the baking state, please insert a small knife blade into the sponge cake and if the blade comes out clean, then it is baked.

So now, we take the sponge cake rings out of the oven and let them cool down at room temperature.

When cold, we unmold each cake with the help of a small kitchen knife blade that we pass around slowly between the cake and the ring.

I will now let your imagination run for garnish and decoration.

Cheesecake - Can It Be Frozen?

Yes cheesecake can be frozen and it freezes very well, if you are having a party next week and you won't have time to prepare your cheesecake at that time, as I'm sure you won't, you can bake your cheesecake a week or so in advance and freeze it, but you must package it properly, but not by wrapping it with tin foil as many people do.

Tin foil is a metal and will cause freezer burn, what you need to do is place your cheesecake in a freezer for 4 to 5 hours just to get it really cold, remove it and wrap it with a plastic film wrap and place it in a freezer bag, try to get all the air from the bag.
