Jamaica Traditional Fruit Cake

To many individuals a good quality cake is seen almost as an exotic foods. In Jamaica the traditional rich old time Jamaican fruitcake is among the most popular. Unknown to many, this is a spin-off of the age old English plum pudding

It is the dream of every Jamaican woman to be able to make this queen of cakes. Many have tried and have gotten aged old generations recipes passed down to them but some how never really got it quite right since each household has its own secretly guarded variation and never really give out all the ingredients or the exact method used..

Cake

This best variation of this cake is made by the creaming method. It is packed with dried fruits. It may come as a surprise but none of the fruits used are from the island such as raisin, currants, prunes, cherries except mixed peel which is sometimes made in Jamaica. The others are imported and thus hike the price of the commodity.

Jamaica Traditional Fruit Cake

The best cake has the texture similar to an English plum pudding .The color is really dark brown and carries a rich alcoholic taste. It is also very spicy as sometimes there are at least 5 spices and flavours used.

There may be also different levels of color and alcohol content depending on the preference of the maker. There are so many variations that you could make a cook book with just Jamaican fruitcake and none would taste exactly alike but are all superb.

There is also one specific ingredient that is very difficult to get out side of Jamaica. If someone in the USA wishes to make this Jamaican fruitcake s/he would have to send to the island for this ingredient or get it only at the West Indian stores.

In some Latin American countries they have never heard of it. This is the browning that gives the cake its color. It is a type of caramel that only Grace Kitchens can produce.
One may attempt to make this browning at home as it is a type of burnt sugar. However it is never quite the same. If an attempt is made to try and make it in an American home ,pretty soon the fire services would come running because the smoke alarm will go off.

You experiences will be broaden when you read and have and tried the fruitcake recipe offered freely just for your experience.

INGREDIENTS :

o 8 ounces or 2 cup flour

o 8 ounces margarine or butter

o 8 ounces bread crumb

o 6 eggs

o 4 ounces currants

o 4 ounces mixed peel

o 4 ounces cherries

o 4 ounces prunes (chopped)

o 1 cup wine/brandy

o 1/4 cup rum

o 4 teaspoon baking powder

o 1 teaspoon vanilla

o 1 teaspoon cinnamon

o 1/2 teaspoon mixed spice

o 1/4 ounces marmalade

o 4 ounces jam

o 1/4 cup honey

o ¼ cup molasses

o finely grated rind of 1 lime/lemon

- 4 tablespoons browning

METHOD:

1. Chop or blend fruits with wine over night

2. Cream butter, sugar and browning until soft and fluffy

3. Beat eggs into mixture one at a time

4. Sieve all dry ingredients together along with bread crumb

5. Add fruits. Jam , marmalade

6. Add molasses and rum

7. Add flour and fold in. Do no over-beat when mixing.

8. Moisten with brandy

9. If liquid is not enough, add more rum, wine or water to the

fruitcake

10. Mix the fruitcake to a pouring consistency

11. The spoon must be able to stand in the mixture

12. Grease tin with a little oil

13. Line tin with greased paper extending two inches above the pan

14. Pour mixture about ¼ inch above the tin

15. Bake at 300 degree F for 2-21/2 hours

16. Yield: two 9'x 3' fruit cakes

serves cake with rum sauce , or covered with royal icing, fondant, butter cream icing.

NB.Diabetics are warned not to eat this cake as it has an extremely high caloric value.

Traditional Jamaican Christmas Cake

Christmas fruitcakes have been baked for centuries with the oldest known recipe dating back to Ancient Rome. Fruitcakes were a way to preserve fruits and nuts as well as a way to celebrate the harvest and seek good luck in the coming year. Jamaicans favorite Christmas cake is dark, spongy and heavy, with rum soaked fruit and rich flavor. Eaten only at Christmas the cake is a favored gift and family tradition.

Ingredients:

Cake

* 1 lb. Raisins

Traditional Jamaican Christmas Cake

* 4 oz. Cherries

* ½ lb. Chopped prunes

* 2 oz. Cranberries

* 32 oz. Dark Jamaican rum

* 4 oz. Citrus peels

* grated rind of 1 lime

* 6 oz. or 1.5 cup flour

* 8 oz. butter

* 8 oz. sugar

* 4 eggs

* 1 tsp. cinnamon

* ½ tsp. allspice

* ½ tsp. Ground cloves

* ½ tsp. salt

* 1 cup wine/brandy

* 1 tsp. baking powder

* 1 tsp. vanilla

* 2 tbsp. browning

Directions:

Soak fruits, peels and rind in rum for two weeks before baking. In a separate bowl whip butter, sugar and browning until creamy. Combine dry ingredients in separate bowl and mix well. In a third bowl beat eggs and brandy together until well blended.

Add egg mixture to creamed butter mixture and blend well. Strain and add fruits, keeping rum for fruity drinks. Gradually mix dry ingredients to batter and fold together.

Pour batter into a lightly buttered 9" cake pan and bake at 350F for 1-½ hours checking after 1 hour. Sprinkle with powdered sugar before serving.

How to Make Plain Sponge Cake the Traditional Way

When it comes to sponge cake making, there are a lot of methods which we can use; some are good, some not so good. But nowadays many bakeries and cake shops are using the familiar premix, which is very handy indeed and just a little faster, but not so much.

In my opinion I still think that when quality is our main concern, the traditional method is still the best. So please find below one very good traditional way to make plain sponge cake.

\"cake Recipe\"

Here are the ingredients needed for around 2 to 3 pieces (6" to 8" diameter):

Egg whole: 510g (around 10 pieces)

Castor sugar: 305g

Plain cake flour: 215g

Corn flour: 65g

Unsalted butter: 15g

As usual we turn the oven on first, with the temperature dial set to 180ºC (356ºF).

After that, we can sieve the flour and corn flour together.

Then we melt the butter and keep it aside near the oven, so it does not set.

Now is the time to place the eggs and castor sugar together in a bowl which can be attached later on to the electric mixer.

Then we start whisking them with a hand whisk on a hot water bath.

We keep whisking all the way through to stop burning occurring on the bottom of the bowl.

When the egg mix starts to become a little hot, say around 45ºC to 50ºC (113ºF to 122ºF) we take the bowl off the heat, and we attach it to the mixer and turn the mixer on at top speed.

When the egg mix starts to become very light and fluffy, it could take 7 to 10 minutes, we turn down the mixer to the 2nd gear, and keep it mixing to let the sponge cake mix cool down nicely.

This is when we have plenty of time to prepare the sponge cake rings or tins. If we are using bottom less rings, we wrap a piece of grease proof paper on the bottom without greasing the rings. If we are using full bottomed cake tins, we just place a round piece of grease proof paper on the bottom of each of them, without greasing them as well.

The reason we do not use grease is because this way the sponge cake mix will stick to the side of the container, keeping a very nice shape, otherwise it will shrink toward the middle. This is just a little trick.

By now the egg mixture should have cooled down enough, so we take the bowl off the mixer and fold in the dry flour mixture slowly mixing with a long spatula. We keep mixing slowly until smooth and last we add the melted butter and combine well.

Then, we fill all sponge cake tins or rings up to 2/3 of their height, and insert them into the hot oven straight away.

If the oven has a ventilation duct, we keep it shut during the 1st half of the baking and then we keep it open for the 2nd half.

The normal baking time should be 30 minutes; this is the standard baking time for plain sponge cakes.

If the sponge cake is not properly baked after 30 minutes, it is because the oven is not hot enough, exception made for super sized rings, of course.

If you are not sure about the baking state, please insert a small knife blade into the sponge cake and if the blade comes out clean, then it is baked.

So now, we take the sponge cake rings out of the oven and let them cool down at room temperature.

When cold, we unmold each cake with the help of a small kitchen knife blade that we pass around slowly between the cake and the ring.

I will now let your imagination run for garnish and decoration.

The standard designs of wedding cakes from years past featured independently separated cakes. These cakes were separated by a system of plates and pillars. The pillars were either of Grecian design or Swan style. Perhaps you've seen cakes that had three or four separations, with cake sizes that ranged from eight to fourteen inches.

The bottom tier which would be the largest cake at fourteen inches may have been situated on the top of a fountain stand. In between the fountain stand could be a water fountain, with three cascades, and interior lights plus running water which was possibly tinted with color. On the very top of the smallest cake, the eight inch in this example, would sit a plastic bride plus a groom ornament. The cake itself would have had roses, pearl beading, foil silver or gold leaves, and so forth.

Nigerian Recipe for Traditional Egusi Soup

Staple foods in the Nigerian diet include: peanuts or ground-nuts, yams, cassava, fish, rice, okra, bananas, guinea corn and millet, and palm nuts.

They are usually starchy and Nigerians love to cook with a lot of pepper and spices especially those from the southwest and southeast. This recipe uses all local ingredients to create a tasty and nourishing meal.

Ground Egusi seeds give this soup a unique color and flavor. If you can't find Egusi seeds in your store, you can substitute pumpkin seeds or Pepitas which you can find in Latin American grocery stores. This soup is thickened with flour ground from seeds of gourds, melons, pumpkins, and squashes, many of which are native to Africa.

Egusi Soup

200 g Water Leaves

50 g Egusi seeds

1 teaspoon Dry Ground Red Pepper

1 medium Onion

100ml Palm Oil

10g Dry Ground Crayfish

120g Fresh Tomatoes

100ml Water

Salt & Pepper to taste

Wash the water leaves well in clean, fresh water.
Liquidise or pulverise the onions, tomatoes and egusi seeds until smooth.
Add the dry ground pepper and fry in palm oil for five minutes.
Add the water, put the lid on and cook for five minutes.
Now add the water leaves, replace lid and cook for a further five minutes.
Finally, add the crayfish and seasoning, warming through well.

Serve with pounded yam or cooked rice and a meat stew, to provide protein.
Alternatively, serve with eba, fufu or any suitable carbohydrate.
