No Egg, No Butter, No Milk at All! - How to Make a Cake From Scratch (Vegetarian Chocolate Cream)

If you never tried this cake before, it would be hard to believe that a complete vegetarian cake with no eggs, no milk, no butter or any other ingredients can be so delicious.

Low-gluten flour, cocoa powder, vegetable oil, those are the main ingredients of today's chocolate cake. Decorated with thick chocolate cream made from the same coco powder, this cake leaves an endless aftertaste at the tip of your tongue.

I want to dedicate this cake to all the vegetarian friends. This is also a cake worth trying for non-vegetarians, because it's a relatively low calorie cake that spares you temporarily from the guilt of excessive animal fat and calorie.

Chocolate cream cake (vegetarian) - how to make cake from scratch recipe

(For your reference, the amounts of ingredients provided hereafter are for three helpings)

CAKE INGREDIENTS:

60 g low-gluten flour,
12 g cocoa powder,
45 g fine sugar,
30 g vegetable oil,
70 g water,
1/4 tsp (1.25ML) vanilla extract,
1/2 tsp (2.5ML) baking powder,
1/8 tsp (0.625ML) baking soda

VEGETARIAN CHOCOLATE CREAM INGREDIENTS:

150 g chocolate syrup,
10 g low-gluten flour,
10 g corn starch

DECORATION: chopped nuts

BAKING: in the middle of the oven, 185° C for 10 minutes

PROCESS:

  1. Sift flour, cocoa powder, baking powder and baking soda mixture into one big bowl, then add some sugar and mix it even.
  2. Add some vegetable oil
  3. Mix with a rubber spatula.
  4. Add a little bit water, but don't stop the mixing.
  5. When the paste is more or less ready, add vanilla extract and again, mix (if you have no vanilla extract, just skip this step).
  6. Pour the well-mixed paste into an 8-inch square baking pan paved with greaseproof paper or tin foil, spread the paste evenly in the pan.
  7. Pre-heat the oven to 180 ° C and then put in the pan and bake for 10 minutes or so, take out the cake for cooling.
  8. Prepare the vegetarian chocolate cream. Pour chocolate syrup into the milk pan, add some sifted low-gluten flour and corn starch and mix evenly.
  9. Heat the milk pan. While heating, keep stirring the mixture (use a wooden spoon or heat-resistant silicone spatula. Stir frequently so that the syrup won't be overly-burnt at the bottom.
  10. When the syrup is boiling, turn off the heat and soak the milk pot in cold water. Keep stirring while the chocolate syrup is cooling. Fully cooled syrup will become very thick and creamy. Voila, the chocolate cream is done.
  11. When the cake is fully cooled, cut it into 4 pieces.
  12. Take one piece of cake slice and coat with a layer of chocolate cream. Put a second cake slice on the top and coat with chocolate cream. Put on a third cake slice and chocolate cream coating, and finally put on the last piece of cake slice. Put the finished cake into the refrigerator for more than two hours so the taste of the cake will become denser.
  13. Take out the refrigerated cake and cut off the irregular edges, then cut into three helpings. Top the cake with chocolate cream, and sprinkle some chopped nuts as decoration.

Making wedding cake recipes from scratch is not that difficult. Take it from me. I have been doing this for over 25 years now. The very first of my homemade wedding cakes was a carrot cake recipe and it was from scratch. Homemade wedding cakes are the best. The only time I EVER used a mix was in a high volume situation. It was exclusively the white wedding cake recipe that was slightly time consuming, and the chefs insisted upon my using their mix. If you have ever worked in a professional kitchen then you know how those head chefs can be at times, it is more about saving money and time, but for me it is so much more about quality. I did manage to sneak in all of my homemade fillings though.

Recipe for Dirt Cake
This dirt cake is simply adorable and delicious, despite its quite extraordinary name. You will need these ingredients in making this great sweet dessert.
A few pieces of gummy worms
16 oz. of cream-filled chocolate cookies, crushed
8 oz. of cream cheese, softened
Softened butter, 1/2 cup
1 cup, confectioner's sugar
1 teaspoon, vanilla extract
8 oz. chocolate pudding
3 cups, whole milk
12 oz. whipped cream, thawed

Procedure:
Cream the sugar, cream cheese, butter and vanilla. Mix these ingredients well until they have become smooth and fluffy in texture. Then, use a separate bowl to combine the pudding mix and the milk. Blend in the cream cheese mixture and the whipped cream.

Afterwards, put 1/3 of the crushed cookies and half of the pudding mixture to the bottom of the pan. Keep doing the same pattern until you have used up all the crumbs of cookie and the pudding mixture. Refrigerate the mixture for 8 to 12 hours. A few minutes before serving, decorate the top portion of the cake with some flower-shaped candies and gummy worms.

If you wish, you could use a plastic flowerpot to put the mixture. This will make the presentation quite adorable, which makes the mixture appear like soil with some gummy worms on top.
Recipe for No-Bake Luscious Raspberry Cheesecake

This no-bake cake recipe features a fabulous combination of raspberry and cream cheese. Have the following ingredients ready:
Cream cheese, 8 oz.
Frozen or fresh raspberries, 3 cups
Cheesecake pudding mix, 1 box
Frozen whipped cream (thawed), 12 oz.
Melted butter, 1/2 cup
Crumbs of graham crackers, 3 cups

Procedure:
Blend the cracker crumbs and the melted butter. Use a fork to combine well and press at the bottom of a pan. Then, bake the mixture for at least 10 minutes. Cool the crust and set aside.

Meanwhile, use a food processor to prepare the filling. Combine the pudding mix, raspberries and the cream cheese. Process well until the mixture turns smooth and creamy. Add in the whipped cream and mix some more.

Spread the filling into the crust. Put the cheesecake into the freezer for a maximum of 2 hours. Prior serving the cake, thaw for one hour and top with whipped cream and slices of raspberries.

Old-Style Red Velvet Cake Recipe From Scratch to Make At Home

Red velvet cake gained its popularity in the 1940s. There are different legends and stories associated with the origin of red velvet cake recipe and every region has its own version of them. Here is an old style red velvet cake recipe from scratch that you can prepare at home. This recipe takes 40 minutes to prepare (30 minutes for preparing the cake and 10 minutes for frosting the cake) and 30 minutes to cook.

What you will need:

Cake Recipes

2 ½ cups of all-purpose flour

1 ½ cups of regular sugar

1 teaspoon of baking powder

1 large teaspoon of cocoa powder

1 cup of fresh buttermilk at room temperature

1 ½ cups of vegetable oil

2 large eggs

2 tablespoons of red food coloring

1 teaspoon of white distilled vinegar

1 teaspoon of vanilla extract

3 teaspoons of vegetable oil for greasing the cake pans

9 inch baking pans - 3

Method:

1. Preheat a conventional oven to 180°C.

2. Separate the egg whites and yolks.

3. Add the sugar to the yolks and whisk well.

4. Add the vegetable oil, buttermilk and vinegar and blend well until the sugar is fully dissolved.

5. In a separate bowl, take the egg whites and whisk to get to dropping consistency.

6. Add the red food coloring to the egg whites, whisk some more and keep aside.

7. Sift together the flour, cocoa powder, baking powder and vanilla extract.

8. Add the flour mixture to the vinegar-buttermilk mix and blend well. There should be no lumps in the mix.

9. Now add the red-colored egg whites to the batter and fold lightly until they are well incorporated.

10. Grease the baking pans with vegetable oil and dust the insides with a little flour.

11. Pour the batter equally in the three pans.

12. Bake the cake in the oven for 30 minutes. If your oven does not have a turntable then turn the cake pans once in between.

13. Once the cakes are done, invert them on a cooling rack and let them cool completely before applying the frosting.

Any red velvet cake is incomplete without delicious cream cheese frosting. Here is what you will need:

2 cups of cream cheese

4 cups of icing sugar

1 teaspoon of vanilla extract

1 cup of unsalted butter

Method:

1. Mix the cream cheese, icing sugar and butter, and beat well until fluffy.

2. Add the vanilla extract and your frosting is ready.

To apply:

-Using a flat spatula, apply the frosting in between the layers of the cake.

-Press the cakes lightly to stick to the frosting.

-Use the rest of the frosting to cover the cake from all sides.

-Cool for 2 hours in the fridge before serving.
